Pot Roast

oven-braised beef with tomatoes and garlic

2.5 lb chuck roll roast
1 can whole tomatoes
10 cloves garlic
2 carrots
2 onion halves
Red wine
Balsamic vinegar
Thyme + Rosemary

Brown onion halves and carrots. Brown roast on all sides. Add garlic to pot. Add can of tomatoes, red wine, vinegar and herbs. Cover and simmer in 275 degree oven for 3 hours. Served with mashed potatoes + roasted green beans.

Chicken Adobo

4 chicken thighs (2.5 lb)
1/2 cup low sodium soy sauce
3/4 cup white vinegar
1/2 cup light coconut milk
9 garlic cloves
red pepper flakes
black pepper

Browned thighs on high. Added garlic, soy, vinegar, coconut milk and pepper. Simmered for about 50 minutes. Finished thighs and garlic off in the broiler for about 10 min until crispy. Reduced sauce on high. Served with coconut rice.

Make again?: I liked it but I wouldn’t make it regularly.
